Chilled and hot food safety rules every UAE outdoor event caterer should follow.

Hot holding

Keep hot food above 63 degrees Celsius using chafing dishes with fresh sterno every 45 minutes. Discard any hot dish held below that threshold for more than 2 hours.

Cold holding

Chilled items below 5 degrees Celsius using refrigerated holding stations. Salads and dairy items must be plated in small batches, not left out for the whole event.
