HACCP and ISO 22000

HACCP is a risk-based food safety framework; ISO 22000 wraps HACCP into a full food safety management system. Both are strong signals of a professional kitchen and are often required by hotel and corporate procurement teams.

Cold chain and delivery

Ask how food is held between kitchen and venue. Chilled items should stay below 5 degrees Celsius and hot items above 63 degrees Celsius. Temperature-logged transport is the gold standard.
