Rice, spice and dum
Great biryani starts with long-grain aged basmati, whole spices toasted in ghee, and a proper dum finish sealed with dough. Skip any of these and quality drops sharply.
The vegetable mix
Cauliflower, carrot, beans, potato and paneer is the standard mix. Add cashew and raisin for premium menus. Avoid overloading vegetables; rice-to-veg ratio should stay around 60 to 40.
Service
Serve straight from the handi with a small burani raita and mirchi ka salan on the side. This one dish alone often decides guest opinion on the whole meal.
